Cacao Ginger Chia Christmas Macaroons

These macaroons are a delightful fusion of rich chocolate and ginger. The perfect guilt-free dessert or midday energy boost, they're both simple to make and packed with wholesome ingredients.

Ingredients:

Makes 10 - 12

  • 1 tablespoon chia seeds

  • 1 cup macadamia nuts

  • 1/4 cup raw organic cacao powder

  • 1/2 cup maple syrup

  • 1 fresh date

  • 1 tablespoon virgin coconut oil

  • 1 tablespoon ginger ground

  • 1 teaspoon vanilla essence

  • pinch salt

  • 1 cup dessicated coconut

Instructions:

1. Mix all ingredients in a food processor until chunky, being careful not to overblend; the mixture should come together nicely without being too smooth. 2. Roll into medium balls, roll or sprinkle coconut flakes on top and refrigerate until solid. Place in cupcake patties. Can be frozen. Topped with Pumpkin seeds and cranberries for the festive season.
