Gluten-free Chia Pancakes

Our Gluten-free Chia Pancakes are a wholesome twist on a beloved classic!

Ingredients:

  • 1 cup frozen berries or fresh blueberries

  • 2 tablespoons chia seeds

  • 1 cup organic spelt flour

  • 1 teaspoon nutritional yeast

  • pinch of salt

  • 1 cup organic rice milk or almond milk

  • 1 cup cashew nuts, soaked 1-2 hours and drained

  • 2 ripened bananas

  • 2 tablespoons maple syrup

  • 1 teaspoon virgin coconut oil

Instructions:

1. Put frozen berries in a small bowl and set aside
2. Mix half of the chia seeds in 1/2 cup of water and allow them to sit until a gel consistency forms
3. Mix flour, yeast, salt and milk together in a large bowl
4. Add soaked cashews, nuts, bananas, maple syrup and remaining chia seeds into the processor and blend until smooth and creamy. Add to a bowl with the other ingredients, alowly mix in and set aside.
5. Heat coconut oil in a frying pan over high heat and pour in large ladleful of pancake mixture. Cook until bubbles appear on the surface and then flip to cook the other side. If you find it difficult to flip, use two spatulas to help turn over without breaking them apart.
6. Serve with fresh blueberries or melted frozen berries, drizzle with maple syrup.
