Alfredo with Cashew Cream & Macadamia

Our Alfredo with Cashew Cream & Macadamia is a delicious vegan twist on a classic favourite.


  • 2 zucchinis

  • 6 cherry tomatoes, cut into quarters

  • 1/4 cup of sun-dried tomatoes

  • 1/2 cup of black olives, chopped

  • 1 tablespoon white chia seeds

  • 2 basil leaves, chopped finely

  • 2 spring onions, finely chopped

  • olive oil

  • pinch of salt

  • cracked pepper

  • Cashew Cream (see recipe)

  • Macadamia Cream (see recipe)


1. Halve zucchinis lengthwise and slice with vegetable peeler to make long strips of spaghetti
2. Add to large bowl with remaining ingredients
3. Add Cashew Cream and mix through. Sprinkle with Macadamia Crumble and serve.
